Oven Baked Crispy Honey Siracha Chicken

Oven baked crispy chicken that tastes like it's fried? Sign me up. While I could've eaten this chicken without the sauce, it was a great addition as the honey and siracha created the perfect balance of sweet and spicy. What I found to be so smart about this recipe was that she recommended you put the seasoning mix into all of your dredges for the chicken, aka maximizing the flavor. To save time and money we kept it simple with roasted cauliflower and quinoa.
Ingredients:
For the chicken
4 thin sliced chicken breasts
2 C panko breadcrumbs
1/2 C flour
2 eggs-beaten
1 tbs salt
1 tbs black pepper
1 tbs chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
For the sauce
3/4 C honey
2 tsp apple cider vinehar
1 tbs BBQ sauce
1 tsp siracha
2 tsp salt
1 tsp black pepper
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
Directions:
Step 1: Preheat your oven to 425 degrees. Line a baking tray with parchment paper.
Step 2: Add panko, flour and beaten eggs to separate bowls. Mix together seasonings and evenly distribute the seasoning mix to each of the bowls. Mix them up and start to bread your chicken breasts.
Step 3: First coat each breast in flour, then egg, then panko. Drizzle at least 2tbs of olive oil on your baking sheet and place each piece of chicken on the try. Sprinkle a bit more salt to taste and drizzle 2 more tbs of olive oil over the chicken.
Step 4: Place in the oven for 15 minutes. Flip the chicken and place back in the oven for 15 more minutes. You may want to broil them for 1-2 minutes at the end to achieve crispiest crunch.
Step 5: While your chicken is cooking, combine all ingredients for the sauce and heat on low until mixed. Set aside until the chicken is done cooking. Pour over the cooked chicken and top with chopped parsley.
