Chicken Fried Rice

Fried Rice is one of my favorites. You can switch up the vegetables, proteins, and eat it for days and days for leftovers and it never gets old. My take on fried rice comes together in 30 minutes and you'd be surprised to find you most likely have most of these ingredients on hand!
Ingredients:
1 lb. chicken breast or thighs *can also use shrimp, steak, pork*
1 cup cooked basmati or jasmine white rice
1.5 cups frozen vegetable medley *I just buy the bag that has peas, corn, carrots and green beans but omit green beans*
2 eggs
2 green onions
4 garlic cloves
1/4 cup soy sauce or tamari
1 tablespoon ginger grated or paste
3 tablespoons toasted sesame oil
4 tablespoons butter
sesame seeds
salt & pepper
Directions:
Step 1: Cook rice according to directions, set aside.
Step 2: Cube chicken breast, season with salt and pepper
Step 3: Heat pan with olive oil over medium- high heat. Cook chicken until done. Set Aside.
Step 4: Add 1 Tbsp of oil, add 2 garlic cloves minced and ginger. Sautee for 3 minutes
Step 5: Add Frozen Vegetable medley and cook for 5 minutes then add eggs and cook until scrambled. Mix with the vegetables.
Step 6: Add in the rice, chicken, soy sauce, butter, sesame oil, sesame seeds and green onion. Toss until everything is mixed well.
