We have been eating a lot of salmon, if you couldn't already tell and I was wanting to switch it up. I was craving a burger, but we didn't have any ground meat on hand, which is when I began my search for an easy salmon burger dish. I followed her directions exactly to make the Burger patty but decided to make our own Aioli instead. I combined 1/2 c mayo, 1 tsp of old bay and grated lemon zest. I also skipped the shaved cucumber and topped it with shredded lettuce and melted Colby jack cheese. Feel free to choose any sides for this dish. We went with rice and broccoli because we were out of good ole' frozen tater tots (which were my first option to be honest).
Ingredients:
4 salmon filets skin removed
2 garlic cloves
1 teaspoon garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp smoked paprika
1/4 tsp black pepper
1/3C panko breadcrumbs
1/4C freshly grated parmesan cheese
Aioli:
2 tbsp olive oil
2 garlic cloves minced
1/2C mayonnaise
Directions:
Step 1: Place garlic in a food processor and pulse; then, add the salmon to combine and pour group up salmon into a large bowl.
Step 2: Add garlic powder, paprika, onion powder, salt, pepper, breadcrumbs and cheese. Stir to combine
Step 3: Use your hands to form mixture into burgers. Then, heat a large skillet over medium high heat with olive oil. Cover the skillet with a lid and cook burgers 3-4 minutes per side.
Step 4: For the Aioli: place mayo in a bowl and set aside; then, heat olive oil in a skillet and add the garlic. Cook garlic until it turns slightly golden, then pour garlic and olive oil into the bowl with the mayo; stir to combine
Step 5: Assemble your burger with the toppings of your liking!
